Byen Bakeri opens for Scandinavian Kringles

Byen Bakeri, a Scandinavian bakery, has opened at 15 Nickerson St. in Queen Anne, across from Seattle Pacific University.

Owner Brian Morck has been in the baking business for 37 years. He started working at a small bakery in Monroe, Wash., before moving on to pastry work at the Four Seasons Hotel and then for a bakery distributor for the last 15 years.

He had opened his first bakery in his early 20s.

Joining him at Byen Bakeri is his wife, Michelle, and pastry decorator Mie Shipe, who traveled from The Grand Floridian at DisneyWorld to work for Byen Bakeri. Specialties include Kringles, other Scandinavian pastries, fresh homemade breads and traditional Scandinavian wedding cakes.
