Bring Your own Barrel/Bottle (BYOB) has been open for some time as a private warehouse where a handful of locals had been making their wine. Now, BYOB owner Michael Almquist is going public.
The entrepreneur is opening BYOB a custom-crush winery in the former Diers Bindery next to the Ship Canal and two blocks from the Fremont Bridge. Almquist has plans to open a restaurant in the 20,000-foot space, too.
"We have the capacity to produce 50,000 cases a year on this site, so I think it's time to invite a few more winemakers to the party," Almquist said in a press release.
Almquist said he has been talking to Washington farmers and visiting vineyards all summer, keeping a close eye on the fruit. He's also been looking into various oaks, forests and toasts with coopers in France, Hungary, Australia, and here in the states. The past year has been spent fine-tuning equipment and getting the space ready for customers.
