Japan and France came together during the Japonaise craze of Belle Époque Paris. There seemed to be something just right about the pairing.
Fuji Bakery, located in the International District and Bellevue, has caused a lot of buzz since its 2009 opening. It is a Japanese artisan bakery with a French twist, under the auspices of head baker Taka Hirai.
The bakery is expected to open its third location sometime in April at 1030 Elliott Ave. W.
