As executive chef for Clise Properties Inc.’s Hotel Division, Sean Pals oversees the kitchen operation at Best Western Plus Executive Inn (200 Taylor Ave. N.), which includes Brellas Restaurant and Lounge. Pals was featured in the Winter 2013 edition of the Best Western Way, the official magazine for Best Western International members.
There are 4,000 Best Western hotels.
Pals started out at the lower Queen Anne hotel as a 17-year-old kitchen steward and worked his way through the ranks to become one of the youngest sous chefs in Seattle at 20. At 25, he became executive chef.
In the article, Pals shared one of his favorite recipes, “Chile Braised Short Ribs with Chipotle Mango BBQ Sauce,” with the magazine’s readers.
