Crumb Cake Ingredients
Cake flour 13 ounces
Sugar 8 ounces
Baking Powder 2 tsp.
Salt ½ tsp.
Soda ½ tsp.
Eggs 2 each
Milk 8 fluid ounces
Vegetable oil 8 fluid ounces
Cinnamon ½ tsp.
Clove 1/8 tsp.
Cream Cheese 4 ounces
Directions:
Sift dry ingredients together. Mix the wet ingredients until smooth. Stir the wet ingredients into the dry ingredients with a spoon or spatula (do not mix with a whisk as you can overmix the batter).
Fill a greased eight-inch cake pan with the batter. Cut the cream chees into small chunks (about the size of a quarter) and layer them on top of the batter.
Add fruit of your choice on top of the batter and cream cheese. Add a thin layer of streusel to the top of everything else. Bake at 325 degrees until set. Allow the cake to cool to room temperature before cutting.
Streusel Topping:
Butter 5 ounces
Sugar 6 ounces
Brown Sugar 3 ounces
Salt ¼ tsp.
Cinnamon ½ tsp.
AP Flour 6 ounces
Directions:
Mix the dry ingredients together. Rub the butter into the mix with your fingers. The mix should resemble crumbs.
